Shaved Beets in Orange Vinegarette
with Grilled Radicchio

2 large heads radicchio quartered
2 red beets shaved on mandolin
2 orange beets shaved on mandolin
1 red onion sliced thin
2 Tablespoons orange juice
2 teaspoons white wine vinegar
1 Tablespoon extra virgin olive oil
1/2 teaspoon sugar
Orange zest
Coarse salt and freshly ground pepper.
Brush radicchio with extra virgin olive oil and grill on
both sides for about 3 minutes.
Arrange radicchio on outside of platter and place beets in
circle in center, and sprinkle with onions.
Dress vegetables with vinegarette and grate orange zest on
top and then season with salt and pepper.
