Heirloom Tomato Salad
with Blue Cheese and Crusty Garlic Bread

Ingredients

 

1/2 inch slices of crusty bread

4 large garlic cloves

3 Tablespoons extra virgin olive oil

 

Instructions

Prepare grill, rub bread with garlic and brush with extra virgin olive oil, grill on both sides.

Cut on the diagonal.

 

1 cup assorted grape, cherry and pear tomatoes, sliced in half

1/2 cup chopped green onion

1/3 cup extra virgin olive oil

1 tsp. balsamic vinegar

 

Instructions

In medium bowl mix onions and tomatoes with salt and pepper, olive oil and balsamic vinegar and let sit while grilling the bread.

 

 

On a large platter slice 10 assorted medium heirloom tomatoes thinly.

 

Thinly slice purple onion, layer on tomatoes

 

Thinly slice 3 celery stalks on diagonal and sprinkle over tomatoes and onions.

 

Pour grape, cherry and pear tomatoes that have been marinating over the rest of the salad.

 

Season again with salt and pepper.

 

Sprinkle Bleu cheese over top and serve with sliced bread.
