FRENCH CABBAGE SOUP

Makes 8 qts.

 

INGREDIENTS

1 1/2 sticks of butter

1 c. flour

2 c. onions diced

2 c. carrots diced

1/2 stick butter

4 qts. chicken broth

1/2pound smoked polish sausage (kielbasa)

2 c. raw peeled diced potatoes

2 heads cabbage

 

DIRECTIONS

 

To make roux melt butter & stir in flour simmer 3 Ð 5 min. stirring constantly avoid browning.

 

SautŽ the onions, and carrots in the butter in a 10 qt. kettle.

 

Add: chicken broth, sausage, potatoes and cabbage.

 

Add to the carrots and onions then simmer 20 min.

 

Add roux

 

Stir for 20 min.  ( simmer)

 

 

It freezes well.
